Hi, I’m Candy and I’m the owner of the Fed Kitchen. Today we are cooking a seared salmon encrusted in pesto with a charred broccoli and ocherietti salad. The dish we are cooking is actually great for summer. It’s light, it’s fresh and when you want to have a night in with your friends or your family, it’s an awesome dish for everybody to enjoy. My pro tip for this dish is to massage the kale, it releases all of the flavours and takes away the bitterness. I entertain a lot at home. We cook six or seven nights out of the week. We see our home as the place to come and gather and I love to feed people. This dish is super good to cook right now in summer, it’s light it’s bright, it’s appealing to look at, it’s got all the different textures. Hand sourcing all the produce at Fed Kitchen is really important to me. I like to be able to touch and smell and feel all of the things that I’m going to offer to my clients. I think that freshness is the main part of making a dish really tasty.
